One of my favorite appetizers here in Kansas City is 54th Street’s Gringo Dip – a white cheese dip loaded with veggies and spice. They serve it with chips or waffle fries and it’s so good that when my sister comes to visit, we have to go eat there at least twice.
I’ve been wanting to make it at home for awhile, but never got around to it until the other day when my husband begged me to.
I peeked around the Internet for awhile and found a couple of efforts to replicate the dip, with one sit actually claiming to have the “recipe from the corporate cookbook.”
Haha, yeah. Right.
None of them were exactly what I was envisioned, mostly because they had too many ingredients or were too complicated in prep.
Anyway, this is my version. It’s not authentic, of course, but close, real close. It makes a lot bigger serving that you’d get at the restaurant, so it’s perfect for the upcoming football season. It requires almost no prep, since you buy everything prepackaged. Also, it has veggies. Sneaky, sneaky.
1 lb Velveeta Queso Blanco, cubed
1 cup pepper jack cheese, shredded
½ cup shredded parmesan
16 oz container pico de gallo
1 cup milk
1 tsp cayenne
10 oz frozen chopped spinach, thawed and drained
In a saucepan, warm the cheeses, pico, milk and cayenne. Stir well until completely melted.
Add the spinach, taking care to separate the leaves.
Serve with chips, on nachos, or with waffle fries.

Football Sundays are a big deal here! We go to church, then come home and eat a huge lunch and veg out in front of the tube. P and I play Fantasy Football, so we actually pay attention to stuff better that way. 🙂 You guys will have to join us for a few!
Dip looks good, though can’t remember the last time we had a cheese dip since we have a dairy free kidlet. But, give the kid salsa as a delivery system for a chip and he’s all good!
We play Fantasy Football here too. I play one team with Hubs and last season also played another team on my own. This year I’m also joining another league with my best friend, so between those teams and the actual ones (Go Seahawks! …even if they did sign T.O. – groan!), there’s a whole lotta football to watch coming up very soon! What team are you cheering on?
I’m sort of stuck rooting for the Chiefs and all. There was one year that they didn’t suck, and it was a lot of fun. But most years it’s just sad. I get annoyed by people who root for the same sucky team every year and then get mad and call others “fair weather fans.” Dude, why would I root for a team that consistently sucks? That’s insane. So, in conclusion, I’m totally a fair weather fan. If the Chiefs don’t biff it, I’ll wear red. If they do, I’ll just eat my cheese dip and hope for better performance from my FF team.

I really wish I sucked in the kitchen. I do. It would make getting out of making dinner SO EASY. And lately I don’t feel like cooking a darn thing!

I am making this for a superbowl party and when my hubby taste tested it, he said it was spot on! The only change I made was to add about 5 oz of frozen spinach instead of 10 oz. I know this dip is going to be a hit at the party! Thanks for the tasty and easy recipe!
