I spend a good chunk of time each morning browsing the internet’s large offering of food porn in search of ideas for that evening’s dinner.
Sites like TasteSpotting and FoodGawker have led me into the minds of some amazing cooks who have in turn expanded my recipe collection tremendously, although from time to time I still rely on the tried-and-true favorites from Deep South Dish, and if I’m having an ingredient crisis, AllRecipes is great for avoiding a last-minute trip to the market.
I am grateful for the easy access to a seemingly infinite amount of ideas, because the cookbook collection I used to have was washed away in a flood several years back. To be honest, it was for the best, since I have zero storage space these days.
Anyway, today I found a recipe for Meatloaf Cupcakes with Mashed Potato Icing over at Sticky, Gooey, Creamy, Chewy. (Warning: Site contains some serious YUM.)
Normally, I don’t really care for meatloaf, but my husband absolutely loves it, so I try to add it into the rotation occasionally. After eating this, I’m now a total meatloaf fan.
This meatloaf recipe alone won me over, even without the great idea for making individual portions using the muffin tin. I admit, I made a few changes, like wrapping bacon around each “cupcake,” (What? Bacon makes everything better. You know it does.) and using Sriracha and ketchup instead of chili sauce in the sauce.
There are a couple of key points in her directions that you should definitely follow, first being that it’s important to not “overmush” the meatloaf mixture, and two, be sure to get those potatoes super creamy before piping if you want a real icing look.
I had fun making these, and my husband let out an appreciative “MMMmmmmmm” when he took his first bite, so I think we have a new favorite around here.
